From Las Vegas Kitchens to Kansas City Confections
Kansas City native Christopher Elbow began his culinary career as a line cook in the Lincoln Country Club and worked in renowned kitchens such as Emeril Lagasse’s Delmonico Steakhouse and Jean Joso’s Eiffel Tower Restaurant on the Las Vegas Strip. But, it was while working as a pastry chef at The American restaurant in Kansas City that his chocolate-making career began.
In an interview with Gimme Some Oven, Elbow elaborates, “I first saw chocolate-making when I was living in Las Vegas. The pastry chef I worked with would make it, but never teach us. So I never had an opportunity to pursue it until I was the pastry chef at The American, where we would send out little chocolates as a dessert. I taught myself how to make it, and then customers started asking if I could make more.”
The rest is artisanal chocolate history. Christopher Elbow’s Kansas City chocolate shoppe and factory are like Willy Wonka for more refined, adult palettes, and have become synonymous with the Fountain City.
Partnership with CLOVR
CLOVR began manufacturing cannabis products in 2020. Missouri medical marijuana patients may recognize the name from seeing their vape pens, concentrates, and THC-infused beverages at dispensaries throughout the state.
